Recipes for Shabbat

Main Chicken Dish

Ingredients

Up to 4 lbs. Chicken pieces, can remove skin

¼ cup flour

¼ teaspoon salt

1/16 teaspoon pepper

¼ cup olive or salad oil

1 small sliced onion

1 sliced clove garlic

3 or 4 chopped celery stalks

1 medium sized carrot

1 ½ cups hot chicken broth

1 cup sliced sautéed mushrooms


Directions

Mix flour, salf and pepper in a plastic bag.   Place 1 or 2 chicken pieces in bag, close and shake vigorously.  Repeat until all pieces are coated.   In a large skillet brown the pieces in oil.   Remove the pieces and place them in a casserole dish that is large enough to lay them out singly.


  1. Place the mushrooms on top during the last 5 minutes of baking.


Shabbat Cake

Ingredients

2 ½ cups sugar

1 cup oil

1 teaspoon vanilla

4 eggs

3 cups flour

1 teaspoon baking power

2 teaspoons of baking soda

1 cup cocoa, either baking or sweetened drink mix (bakig chocolate makes a heavier cake)

2 cups liquid coffee


Directions

Mix the sugar, oil, vanilla and eggs.   Gradually add in the other dry ingredients, finishing with the liquid coffee.    The batter will be very liquid.  Bake at 350 degrees for 45 minutes in greased bunt pan or 2 loaf pans.   Check with a toothpick.  Cool thoroughly before removing from pan.



Sabbath Bread

Ingredients

1 cake fresh yeast

¼ cup warm water

5 cups flour

1 teaspoon salt

1 tablespoon sugar

1 tablespoon salad oil

1 egg beaten

warm water


Glaze:

1 egg yolk diluted with 1 teaspoon water

poppy seed or sesame seed (optional)


Directions

  1. Bake at 350 degrees for about an hour until golden brown.

Apple Cake

Ingredients:


3 eggs

¾ cup sugar

1/3 cup oil

¾ cup matzah cake meal

5 apples pared and thinly sliced

1/3 cup walnuts

½ cup sugar

2 teaspoons cinnamon


Directions


  1. The recipe may be doubled and backed in a 9x13 inch pan at 350 degrees for 1 ½ hours.



Moist Brownies

Ingredients


5 eggs

1 cup margarine, melted

3 cups sugar

1 tablespoon vanilla

8oz baking chocolate, melted

1 ½ cups matzah cake meal

2 cups chopped walnuts


Directions


  1. Bake in a greased 9x13 pan at 375 degrees for 35-40 minutes.


Apple Matzah Kugel

Ingredients



4 matzahs

4 eggs, well beaten

½ teaspoon salt

¾ cup sugar

3/8 cup (3 oz or 6 tablespoons) melted margarine

1 ½ teaspoons cinnamon

¾ cup chopped walnuts optional

3 large apples, pared and chopped

¾ cup raisins, golden are best


Directions


  1. Bake in greased 1 ½ quart dish at 350 degrees for 45 minutes


Chocolate Chip Cookie Bars

Ingredients:


2/3 cup margarine, melted

2 cups brown sugar

3 eggs

1 teaspoon vanilla

2 cups matzah cake flour

½ teaspoon salt

½ cup chopped walnuts

¾ cup chocolate chips


Directions

  1. Bake at 350 degrees for 25 minutes.

Recipes for Shavuot

Blintzes

Ingredients:

Crepes
1 cup flour
½ teaspoon salt
4 eggs
1 cup milk
Butter or margarine to fry with

Filling
1 cup dry cottage cheese
½ cup sour cream
2 tablespoons sugar
1 teaspoon vanilla

Directions:

Mix crepe ingredients.   Butter and heat a skillet.   Pour about ½ cup of batter onto the pan, forming a large circle.  Cook on one side only, until the blintz starts to ‘blister’ and the edges curl away from the skillet.   Ease onto a board fried-up adding margarine to the skillet as needed.
Mix filling ingredients.   Place about 2 tablespoons of filling onto the cooked-side of each crepe.   Fold the top and bottom to the centre.  Roll the sides over.   Return to pan and try lightly until the centre is cooked.

Noodle Kugel
*Note Mix  ingredients and refrigerate overnight before baking

Ingredients:

1 lb medium noodles
2 pints sour cream
3 cups half and half cream
7 eggs
1 ½ cup sugar
4 oz melted margarine
1 teaspoon vanilla
1 cup white raisins
½ cup cornflake crumbs
1 teaspoon cinnamon
2 teaspoons sugar

Directions

Boil noodles until done.   Drain.  In a large bowl, mix well the sour cream, cream, eggs, sugar and margarine and vanilla.   Add the noodles and raisins.    Pour into a large greased pan at least 10x15 inches.   Mix cornflake crumbs, cinnamon and sugar.   Cover the casserole.  Cover with foil and refrigerate before baking.    Turn oven on to 350 degrees.   Bake for 1 ½ hours.


Miniature Cheesecakes

Ingredients

12 vanilla wafers
2.8 oz packages cream cheese
½ cup sugar
1 teaspoon vanilla
2 eggs

Directions

Line cupcake pan with foil liners.  Place one vanilla wafer in each liner.  Mix cream cheese, vanilla and sugar on medium speed until well blended.  Add eggs and mix well.   Pour over wafers.  Filling ¾  full bake at 325 degrees for 25 minutes.    Remove from pan when cool.   Chill and top with fruit, preserves, nuts, chocolate or pie filling.ROSH HASHANAH RECIPES

Honeycake

Ingredients

½ cup oil
1/3 cup honey
1/3 cup packed brown sugar
1 cup applesauce
1 ½  cups flour
1 ¼  cups teaspoons baking soda
¼ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg, optional
¼ teaspoon ground cloves, optional

Directions

Mix oil, honey, sugar and applesauce.   Add dry ingredients, mixing thoroughly.  Pour into greased 8 or 9  inch square pan.   Recipe can be doubled and place in a 9x13 inch pan.   Bake at 350° for 35-40 minutes.


Sole Roll-Ups

Ingredients

1 medium size onion
1 tablespoon oil
4 small sole fillets (about 6 oz each)
1 medium size zucchini (about 10 oz)
1 14 ½-16 ounce can stewed tomatoes
½ teaspoon dried basil leaves
1/8 teaspoon pepper

Directions

Chop onion, cook in oil in a 10 inch skillet until tender (about 5 minutes).   Sprinkle one side of fillets with salt.    Roll each fillet, salt-side in, starting with a short end.  Cut zucchini into ½ inch chunks.   Add stewed tomatoes, basil, pepper and 1 teaspoon salt, stirring to break up tomatoes.   Add zucchini.  Place sole roll-ups in tomato mixture, seamside down.  Turn up heat until mixture boils, then reduce heat, cover and simmer for 15 minutes or until sole flakes easily.

TZIMMES

Ingredients

2 lbs carrots, peeled and sliced
¼ cup orange juice concentrate
½ cup honey
2 lbs canned yams, drained
1 lb pineapple chunks
¾ lb dried fruit mix, chopped
½  cup raisins
1 tablespoon pumpkin pie spice

Directions

Steam carrots until soft.    Mix with remaining ingredients in a large saucepan.  Cook over low head until fruit is soft and everything is heated through.

Sukkot recipes

Fruit Salad

Ingredients

Ripe fruits such as melons, bananas, pineapple, peaches, nectarines and grapes.

Directions

Cut melons or scoop out ball shapes. Add remaining fruits.   Can serve as a side dish or dessert, adding flaked coconut or whipped cream if desired.   Can serve as light meal with cottage cheese in the middle.   Sprinkle with chopped walnuts if desired.

Sweet and Sour Cabbage Meatballs

Ingredients:

1½ lbs ground beef
1 large cabbage
15 or 16 ounces of tomato sauce
¼ cup brown sugar
¼ cup lemon juice
Long grain wildrice

Directions

Cut a deep circle at the core of the cabbage.   Place in large saucepan of boiling water for 3-5 minutes or until leaves can pull away, being careful not to overcook.   Mix meat with ¾ cup of tomato sauce.   Put in desired amount of rice.  Roll into 12 balls.   Place each in centre of cooked cabbage leaves.   Place seam-side down in a large skillet.    Mix remaining sauce with sugar and lemon juice.   Pour over meatballs.   Simmer cook, cover until done.    45 minutes to one hour.   Loosen balls from the bottom of the skillet occasionally while cooking.
